Builders Logs and FARs

As I mentioned in my introduction, I have two gear damaged Pitts (S-1C and S-1S). I have the logbooks but since both have gone through several unknown owners, I didn't get the builder's logs. What is the FAR references I should be studying regarding experimental aircraft? Am I able to do the repairs and what kind of paperwork is involved? How to document repairs ? Probably should have done more research before buying them some years ago while I was still working. But they were RED. And SHINY.
