Front Cockpit Instrumentation

Just curious what instruments most people put in the front cockpit of their biplanes... We're thinking about removing all of them except when someone rides along, and then putting in the new portable Dynon EFIS and attaching it to an instrument hole cover... Although for instruction we might keep the airspeed and altimeter.
