Pitts S1S High Oil temperature during Break In

Hi everyone,
I've recently bought this S1S that has a rebuild AEIO 360 engine. When I got her the engine had 16hrs on.
Since then I just flew a few hours and I've burnt almost no oil, which should indicate the break is in a "good shape".
The engine run smoothly and I follow the recommended break in procedure:
30min at 75% power at 3000ft MSL then 30sec at100% power and back to 75%.
The oil pressure indicated is stable around 70psi (green arc is 60 to 90) which is fine.
But the oil temperature indicated is high but stable at 235F (green arc is 100-245).. so quite high.
I don't have instrument to read the cylinder temperature.
The OAT was around 25C I guess.
My wooden propeller doesn't have a spinner, I'm still waiting for delivery.
My questions are:
Is that normal? Will the temperature go down during the next hours of break in procedure?
Would my oil temperature gauge be wrong?
Any type of explanation would be very welcomed!
