Horizontal stabilizer fairing attachment

I'm restoring a Starduster Too (N2FL). The original build had fiberglass fairings on the horizontal stabilizer that were attached by glue with finishing tape to the fuselage/vertical and the horizontal. This would make it a real pain to remove the inspection covers at the rear fuselage, plus make it impossible to remove the horizontal stab if you ever needed to put it in a trailer.. I'm looking for a way to attach these fairings to the fabric in a way that would make them removable. My current thought is to sandwich some plastic or aluminum in the contact areas and attach with self tapping screws, similar to the way the aileron exits on the top of a J-3 wing are attached. Any thoughts?
